I would say I started off at 1200 (too low for me, on reflection), then as I stepped up the exercise would aim for 1500 - 1700 (eaten back). Now, for maintenance and muscle? Absolutely. I slept badly last week for one reason or another and even though I wasn't eating more late at night, the next day I'd be absolutely ravenous and eating much more to try and perk myself up a little bit. Raging appetite.

When I go to restaurants like this and am being very strict about what I'm eating, I'll go for a steak and ask for a plain salad as the side, with the dressing separately.
