Its simple fact. Strength training can increase your metabolism thus increasing the amount of calories you burn "just laying there"...so that could be what made the difference.

You can't really gain lean muscle mass while losing fat...its about as close to physiologically impossible as you can get. At best you can maintain muscle mass while losing fat, which is optimum. It seems to me you are simply burning more calories when doing your strength training.

To be quite honest your muscles can't grow when eating at a caloric deficit. Aside from that you are going to want to increase protein. In particular, if you are looking to gain muscle mass you should be eating around 1 gram of protein per pound of lean body mass.

I make home-made chicken nuggets. Its really easy and can be very healthy. I use things like oatmeal, sunflower seeds, and whole wheat flour for the breading. As an alternative to frying you can spray them with some Pam and bake them...they still get pretty crispy.

Whey protein is a natural derivative of milk. Its pure protein and a great way to not only meet your protein goals but to also recover after a workout. Not all whey is created equally though. Usually, the more expensive a product is the more natural it is.
