This ^^^. I use parchment paper in a dark enamel (shallow) roasting pan--easy clean-up! I use olive oil, fresh cracked pepper, sea salt, wedges of onion and sometimes rosemary or another herb. Roasting caramelizes the veggies...yum.

Alcohol-wise, I would opt for beer in a bottle, so that you can track the calories accurately. Mixed drinks tend to be calorie bombs, and you can never be sure how much of each ingredient the bartender uses. What I find most dangerous about drinking is the more I have, the less I care about how much I eat...

I try to stay around 1400, even though MFP put me at 1200. Haven't gotten off my butt and started exercising yet, but plan to eat at least some of those extra calories when I do! Spinning is a fabulous workout. If you don't like it the first time, I recommend giving it a couple more tries.
