This conversation is really interesting. I really don't understand why any diet would want you to cut down on cucumbers or carrots.

Less meat more fruits and vegetables. Plant-based diets are the healthiest. The book "How Not to Die" was really informative about this. Basically eat mostly fruits, vegetables, and whole grains.

Sometimes you have to force yourself to eat something, even if it's something small. I would check the amount of calories you are eating and if at the end of the day, you are eating too little, then "treat" yourself and eat something you like. I count them. I record everything in MFP, even diet soda, coffee and splenda. I imagine it depends on how many calories of veggies you are eating whether it makes a big difference. I think I eat about 100-150 calories of veggies a day.
