If you are absolutely NOT eating fruit or potatoes, including sweet potatoes, or added sugar of any kind, you might not need to track. But I log my food everyday. I can put away a bus load of carbs just working at my desk mindlessly eating carrots.

This is correct, she's right on the money. I eat bacon and eggs regularly. It has improved my blood work numbers tremendously. In fact, my numbers are great. High fat diet is amazing. So, YES. To both.

I hear ya! You can't really gradually cut carbs though, in my experience, the torture will never end! Rather, I found for me it was best to experience the uncomfortable feeling for a week or so and just power through it. With naps. Or bacon. Increase your fat intake to help with feeling deprived.
