I don't know why starch, not just fiber, seems to be important for my gut, but I suspect that it's something my microbes like.

I've never had consistent weight loss. It's always been a matter of losing weight, reaching a plateau, then losing more and plateauing out again, for me. Overall, my only strategy is to stick with your plan, and double down.

My total cholesterol went up on a low carb diet, mostly due to an increase in HDL, which is now almost as high as my LDL, 132 and 137, respectively. Both are high. My A1C was beautiful though.

Correct. As long as you aren't gaining fat, you aren't going to gain a bunch of muscle mass either. I'm in the big calf club too. You would not believe how many people with skinny calves envy those of us who don't have to work to build them.

I stopped lifting for a while to focus on rehabbing my knee. I started seeing results when I started again, pretty fast, like maybe 4 weeks in. I felt results a lot sooner. I think I carry myself differently when I'm lifting.

Speaking only for myself, I discovered that all the noticeable benefits I got from going keto were the same on a more moderate plan. And I feel better with the somewhat higher carb diet, especially my GI tract.

I remember a thread in here about a study that showed that it takes about a year to adapt to weight loss, and stop feeling hungrier in your body's attempt to regain weight. Your metabolism will repair itself. I would keep up your dieting momentum, and keep in mind that maintaining gets easier within a finite time frame.

Having a routine helps me. I exercise early, so it's done, and if I do more later, that's great, but I don't have to. I take more active recovery days than a younger person probably would. I eat small amounts of grains, and use my carbs for veggies, dairy, and small servings of fruit. You can do what works for you. I do try to minimize sugar, and spend my carbs nutritiously, but it's a matter of choice.

I've never taken it. Before I had surgery, my period made me higher than a kite, maybe because of the cramps. I didn't believe in using medication in those days. (I've since learned that meds can be a very good thing). I used to do a crazy belly dance/yoga/ballet routine that relieved the worst of them.

I roast vegetables on a baking sheet covered in aluminum foil. You could use a nonstick baking sheet if you don't want to need oil to keep them from sticking. I even make things that are supposed to be done on the stove, like cauliflower fried rice, in the oven. It's easier to clean up.
