My little guy loves potatoes but veggies, not so much. So I made cauliflower and potatoes and mashed them together--might help you work into the idea if you aren't too sure. And I love a wedge of Laughing Cow cheese mashed in with my cauliflower--yum!

Thanks for replying! My workouts are very basic right now--walking outdoors and at the gym--treadmill, elliptical--run a little. My brother might hook me up with a friend working to be a personal trainer--I think that could really be the thing that get's me moving in the right direction. Have to start somewhere. . .
