  • I have the same problem. I either pick on some baby carrots or steamed veggies while Im cooking or I chew gum.
  • I think more than finances, it's about not liking/wanting/having the time to cook. I guess it's easier for some people to buy off the $1 menu than to cook a meal. I am one of the only people I know who cooks every night. Most people order out -VERY expensive. Or they will eat junk/fast food because its fast and cheap.
  • I find that I spend less eating "clean" as I can with fruits, veggies, beans, etc. When I go to the supermarket and buy packaged processed foods I spend soooo much more. Oatmeal is super cheap per serving, and filling. A box of whole wheat pasta and a bunch of broccoli (in my area) could be about $3 to feed 3-4 people.…
  • Peel the skin off and cube eggplants. Sautee in a bit of olive oil with sliced onion and some black olives. When it starts to get soft, add a small can of tomato sauce, a tablespoon of red wine vinegar and a pinch of sugar. Great as a side dish or on top of pasta or rice. Sort of a cross between a ratatoulle and a caponata.

  • You can do so many things with pasta - add sauces, veggies, cheese, chicken, or put into soups. Not to mention, 1 lb. costs about a dollar ..and very delicious and hearty. It's the secret of every italian on a budget!
