I used to drink 4-5 cups of diet soda a day. I started drinking only one cup in the morning for a few days and then I just quit altogether. You will most likely get really bad headaches the first few days but after that you should be fine!

You need to eat at least 1200 calories a day. You didn't gain 12 pounds of muscle weight without intending to, that is impossible. Your home scale is probably not calibrated correctly.
