Make sure you eat back your exercise calories, they will help you not harm you. PP is right, consistently eating below 1200 a day (especially when you are using 2000 a day) is going to do more harm than good in the long run. My husband gave up bread and dairy dropping 20 pounds in 3 weeks time. He used tortilla wraps in place of bread for sandwiches. We also started buying lunch meat at the deli counter where they slice it right there for you, less preservatives and additives that way.

I agree with giving them (and yourself) a healthy after school snack and then eat dinner after the activities are over. Utilize your crockpot on the super busy nights and have simple meals on the not so busy nights. Just because you are out and about at a "normal" dinnertime doesn't mean that you have to eat crap.
