I tried cauliflower rice tonight. I follows a recipe by Elanas kitchen adding celery and onion to the "rice". It was delish and faster to make than real rice. I loved it so now I'm looking for more recipes with cauliflower. Why substitute it for rice? Well for one thing it is so much lower in calories. What's not to love.

Oh...I also used to wake up to tingling hands and/or feet. I thought it might have been related to thyroid too but I'm no longer feeling that tingling since I changed my diet. I'll continue to monitor and see if it comes back. Is this a normal symptom with gluten sensitivity?

I don't see how it could be insulin resistance since I am eating carbs. As a matter of fact, I am eating similarly the same amount of carbs as before when I wasn't losing weight. Well to me this question depends on what weight watchers program you are talking about. Points Plus is great for those with a higher metabolism. Taller folks, skinnier people, less to lose crowds tend to have more difficulty losing weight on points plus but Momentum points still works for those in these situations. Either…

I usually just write on the notes section how many earned AP. There is also apps for smartphones where you can enter total daily points so that it keeps track of your weekly.

That's about my average I sometimes go lower than 1200 and some days higher than 1200 but around 1200 is my weekly average calorie goal.
