If they are home made sweet potato wedges, I can see that as perfectly fine/not unhealthy. But if you bought them as bagged/frozen/premade... they are probably high in sodium and other preservatives that aren't especially that great for you.

Rather than Skim Milk, you can always try unsweetened almond milk. It only has about 1g of Protein vs. Skim Milk's almost 8g of protein.
