Coke Zero (even the new Coke Zero Sugar) is the bomb :) but it definitely triggers me to eat everything I can find. I don't have this reaction with much smaller amounts of artificial sweeteners such as in my coffee or water flavoring drops.

I like to think I'm eating mashed potatoes with cheese and sour cream...maybe that's why I don't mind if they get too mashed :)

ohh, maybe that's the difference...I've been doing it from raw (trader joe's bags). I add maybe a 1/4 c. of water and let it simmer for at least 30 min. Since it takes a while to make, I usually make a large batch and then use as I need for recipes.

I actually never squeeze out the water...i just saute for a long time and the water evaporates.

yes, you've got it! I've shredded by hand with a cheese grater, chopped in food processor as others have said and easiest is to buy already shredded or "riced"...if you have a Trader Joe's, they have good options raw and frozen.

Glad to read all of this info this morning. Was planning to post a Keto msg as well but you all beat me to it. :) I'm considering starting today after failed attempts at a more moderate approach to weight loss. I need something new to hopefully kick me into gear.

I love IF...feel like it's the only method I could ever stay on long term. I also do the 18 off/6 hours to eat pattern. When I've had success losing before, I've also added in one day (Monday) where you take the calories much lower for just that day. Trying to get back to this now! Good luck to you!

Night eating is my biggest issue, too! Intermittent Fasting has helped a bit...I don't eat anything until 11am or so (awake around 6am)...so gives me more room in the evening when I have issues stopping myself. I'm learning not to fight it, just reorganize how I plan my eating.

Hi there - I'm 43 and looking to lose about 40 lbs. I've yo-yo'd for the past 20 years and feel like I've tried everything under the sun to stick with it. I could certainly lose 100 and still be healthy but I'm looking to start with a 40 lb goal. Looking for all the ideas and encouragement out there. I'm doing a 'mayo diet' type diet and exercise of walking, elliptical and some basic strength stuff.
