I buy bags of frozen cubed butternut squash. Microwave and sprinkle with curry power and pepper. Sometimes parm cheese too. Yum.

I'm on day 3 of eating this! It get's better with age! : ) I didn't put any cream cheese in it. I've made burritos out of it and put plain fat free greek yogurt on top. Delish! (then again, I use plain fat free greek yogurt in place of sour cream on EVERYTHING!)

Made this today and am practically drooling waiting for the last little bit of cooking time to be up! I, too, dumped everything in and THEN entered it into MFP. I just went through the same thing. Very frustrating. Try changing something. I ate a little more (maybe 100-200 calories) and added some light weight exercises to my usual treadmill-only. I'm no expert, but I think you just need to shake up your routine when you get stuck. Good luck! Hang in there!

I found an awesome way to keep lettuces and such fresh... I think it was on here! As soon as I get them home, I layer them in thin layers between paper towels in a tupperware container. The lettuce mix I buy lasts two weeks this way!!!! The key is to reduce moisture and air that get to them.
