Currently in the oven: Whole chicken roaster with baby red potatoes (for the husband/kids), carrots, celery. I seasoned it with Greek seasoning and olive oil. It smells wonderful! I absolutely love one-pot dinners - less mess to clean up!

I love my unfiltered apple cider vinegar! All kinds of good health benefits. I use its in salad dressing and to make mayo.

Salad here, too! Either a big green salad with leftover chicken or ham, ranch dressing or olive oil/apple cider vinegar, or tuna or salmon salad mixed with mayo/celery/onion/chopped avocado.

I started out more Atkins, but then decided I wanted to eat more organic/not processed foods, so I've pretty much transitioned to Primal. I do consume dairy, but only organic. I try to avoid foods with ingredients I can't pronounce! I generally keep net carbs under 20-25 per day.

This was also my experience. I was having major carb cravings/hunger last week. I was incorporating more carbs than usual, even though they were good carbs. When I backed off the carbs a bit, the cravings/hunger disappeared.

I love Mexican food, too, but it doesn't love me... My local place has a really, really good grilled shrimp salad with greens, bell peppers, onions, shredded cheese, and avocado slices. My problem is bypassing the evil chips!

Linda's recipe site is great. I have several that I use over and over. As far as breakfast, I routinely have non-traditional breakfast. It can be leftover dinner from the night before, deli meats rolled in cheese and mayo, even salad. Weird, I know. There's no rule that says breakfast has to be eggs!

I totally agree with adding fatty things - I'm just trying to shy away from fast foods/processed foods in general and want things I can throw in my lunch box (it's a big one). I've never had Babybel cheese. Will have to try that. :smile:

Thanks, great ideas! I did put a bag of almonds in my drawer and some Quest bars. The hospital next door has a decent salad bar, but not too much in the way of protein. Exactly! It's all in how you say it...if you say I'm on Atkins, people assume you're eating a pound of bacon a day and tell you you're kidneys are going to explode!
