I eat 1600 calories a day as well. I eat from 10 am - 6 pm (8 hour eating window with 16 hour fast). It works wonders for me, but personally if I have to many carbs the first couple a days I don't really lose weight. Personally I eat around 1200 calories a day as well. It has worked for me, but I feel like I could eat a lot more if I wanted to lose weight slower.
