I make Asian inspired soups with zucchini noodles -I just start with Trader Joe's miso-ginger broth and zucchini noodles, and then whatever I have on hand - asparagus, mushrooms, green onion, shredded carrot, etc - bonus, it's speedy fast.

Check Youtube for seated exercises or ones developed for wheelchair bound people. I was in a chair for several months after breaking both legs in an accident and found several workouts that kept me from falling too far behind while I was recovering.
