I "roast" beets in my crockpot - I just wrap them in foil (not required, but makes clean up easier). You can rub them with oil first, or not. It's hard to make a mistake. I cook them on low, 6-8 hours. The skin slips off easily and they are ready for anything.

I'm averaging about 1 lb every 10 days or so, since about May. I'm older, shorter, and weigh more than you. Not exactly the same, but - I don't drink soda, it just wasn't a part of life growing up and i never developed a taste for it. I don't make a big deal about it, i just don't drink it on break or order it at work lunches, having water or iced tea instead. For some reason there's one co-worker that wants to make a big deal…

Talk to yourself like you would to someone you care about. Not, "omg you were tired after only 17 min", but "Good for you - you started! You did 17 minutes more than you did yesterday!". Depression sucks (been there done that) but YOU don't suck. Walking is great for healing from depression.
