In other words if I gain say 200 calories from exercise, eat those as well, so basically eating 1400? I love high protein snack, I have found nuts keep me full longer, and even boiled eggs.

Everything you listed in your diary over the weekend is highly processed foods, means =more sodium. Drink lots of water the next few days, with lemon. Lemon is a natural diuretic and will help flush the fluid weight off of you.
