My dad makes homemade Italian dressing by using olive oil, vinegar, Italian seasoning, basil, parsley and pepper. It's all "to taste" in his mind, so really it's a matter of how vinegar-y or spicy you want it to be.

Gala, Fuji, and Granny Smith are my favorites. Granny Smith is a really great one to juice, it brings out such a strong apple flavor (I like it mixed with cucumber juice and a tiny bit of lemon).

Hehehe. Now "Red Solo Cup" is going to be stuck in my head for the rest of the day. I had a manager who had a styrofoam cup from sonic and would fill it with vodka and sprite. Essentially the same process, I suppose.

Friday: I'm stuck at work in an office all day but luckily I have a standing desk so I am ditching the barstool I have at it. Going to stand/walk around all day. For food options this weekend, I'm going to make healthy grilled shrimp kabobs with a small side of rice and a salad for dinner tonight.

Just starting today but my Thursday Truth is: Today hasn't been fantastic but not terrible. There is no chocolate in my apartment and I don't know if I can cope with that. It's a comfort food. I've been trying to not eat past 9 p.m. and it's 9:30 already and I've got a snack craving.

Squash sauteed with olive oil, oregano, paprika and chopped garlic with a side of brown rice is one of my favorite veggie dishes. Also, spinach and tomato (pr mushrooms) with a little bit of mozzarella cheese melted in a tortilla (low fat, or a flat bread) makes an interesting quesadilla.
