OP, is this 1200 before or after you factor in exercise calories? If you aren't eating back your exercise calories I would say to do that, and see how you feel. I can't manage on 1200 calories/day but if I do exercise and eat back even half the calories I find it much easier to stick below 1200 net calories.

I would bring healthy snacks but also bring in mini versions or low cal versions of 'treat' things- so if you DO get that sweet craving you're not faced with something that at best has a few hundred cals, at worst is home baked therefore you can't accurately gauge the calories in it. I agree, if you are working out 3 x a week and you are on your feet all day then 1200 isn't enough- you should try to eat more! Also w. regard to the take out portions, the 200 cals are probably about 2-3 spoonfuls. The best/least likely to result in an error way to do it would be to weigh the rice and create a calorie entry to use when you have rice xx

I have pizza once a week, my husband and I split a shop bought pizza express pizza (the hand made kind), load it with veggies, jalapenos etc, and have it with salad and a few pieces of garlic bread. Mashed carrot and swede (or just swede) with black pepper and a little light butter! Way less calorific than mashed potato and really yummy :) Also, I like chopping 120-150g new potatoes up, seasoning them, and baking in the oven for 30 minutes- they seem to go a long way and they make good guilt free roast potatoes :)
