Yes. Even just sauteed in olive oil and a touch of garlic is good. I cook them until slightly tender. Over cooked is nasty.

Yes. Baking powder has a short shelf life. If it's too old it won't rise. Throw the old one out. Date the lid of your new one so that you know when you opened it. 6 months is how long you should keep it. Although I've been known to keep it a year. Not any longer than that though.

I cannot do beans. The carb count is too high for me and they will raise my blood glucose. For a long time I did take a fiber supplement but I had to stop as it was working a bit too well. Now that I've discovered MIMs I get plenty of fiber.
