Have you ever tried simmering them in beer? FANTASTIC! The alcohol gets cooked off so all you get is the delicate brussel sprouts with the flavors the beer was brewed with. I've recently started running and I am by no means a runner. If you're not sure of it I would suggest trying to start out slowly. Make a meatless meal or designate one or two nights a week meatless, see how you like it.
