I think there's too much preoccupation with this sort of thing. Lose enough weight and the fat will go along with it. Do weight training while not starving yourself of protein and muscle will be added. It's that simple. 1 or 2 pounds a week as a weight loss goal is a good one.

A few more points after reading your post: 1. Going from 160 to 114 is not realistic. You need smaller goals. Perhaps 140 or 130. 2. Food diaries do work. However, this is what I think you need to do to make them work: 1. Use them all day long, not just historically. 2. Use the smart phone app. 3.
