My macros are set to 60% fat/30% protein/10% carbohydrate. This is a similar breakdown to many who are paleo. "TDEE - 20% = daily caloric intake" is the common refrain you'll hear for weightloss. I've been paleo for three years and I have never gone out of my way, financially, to buy grassfed-anything. If it's not grassfed, buy the leanest you can and cook in healthy fats (I like coconut oil best). They say all the nasty stuff of non-pastured, non-grassfed animals is concentrated mostly in the fat.

I have no proper recipes, really but I can tell ya', single skillet meals are awesome. Cook some meat in a bunch of fat (I like coconut oil), throw a bunch of vegetables in with it (and unsweetend flaked/shredded coconut - seriously, try it) spice to taste and cook until delicious. I think people get the idea that fried food is a no-go on paleo because when they think of "fried food", they think of breaded items. I suppose you could try to paleoize "breading" if that's what you want, or you just skip the breading altogether. I shallow fry pretty much everything I cook in coconut oil.

If you gain that much weight I guarantee a vast majority of it will be water retention. I doubt that it's physically possible to gain that much over a vacation (assuming a typical one- or two-week long vacation).

I do 18-hour fasts everyday. Which is to say that I have a 6-hour eating window, which is usually ~11:30am to ~5:30pm. Some days, the first meal I eat is a salad, some days it's an omelet, others, it's steak and/or bacon and eggs. I never feel sick after but that could be because I do it all the time and am used to it.
