We just made zucchini fritters the other day for breakfast & they were sooooo good! 4 cups zucchini grated & strained 4 eggs Salt, pepper, onion powder Stir together and drop scoops into pan. Flatten then out. 2-3 min/side. Tasted a lot like yummy hashbrowns!
