I've been making rice salads with quinoa, diced apples, seeds, shredded chicken, sometimes beets, and various cheeses. They are extremely filling and oooooh so good :)

You can make a great stir fry or a chicken and squash casserole. You could also cut everything up, mix in a bowl and have a nice salad.

One other one that's really good is to take bagel thins such as cinnamon raisin and make french toast using eggbeaters mixed with a little extra cinnamon and some vanilla :)

Over the weekend I made Egg Boats. i used a whole wheat baguette, hollowed out most of the center, filled with eggbeaters, laughing cow cheese, diced tureky bacon and fresh veggies. I tried a new salad today made with a 1/2 cup of the wild grain minute rice with quinoa, 1/4 diced apple, 2 tbsp. red beans, 1/4 cup shredded chicken, and chopped cilantro. I may be addicted :) SUPER filling :)

You can also stuff them with sauteed veggies, roll up and bake. Top with roasted tomato sauce...called a roulade.

Veggie pizzas, maybe with a little turkey pepperoni, fire roasted tomato sauce, reduced fat mozzarella and homemade wheat crust. MMMMM....with a nice glass of Pinto Noir. 2 large slices + 1 glass of wine = around 460 calories, virtually no fat. You can round it out to 500 by adding a side garden salad with light dressing.…
