I make breakfast sandwiches (I found the recipe on sweet peas and saffron) and also make crustless quiche. Oatmeal is another good option to have with a fried egg and some sauteed mushrooms, spinach or bell peppers.

I slice up some onions, mushrooms and spinach and put it in a breakfast sandwich. I have also done tomato and zucchini, peppers, spinach and feta cheese. There are lots of great ways to incorporate veggies.

The dressing i make - olive oil, either balsamic or red wine vinegar, garlic, salt and pepper, Dijon mustard and lemon or lime juice.

For cheap meals I usually do more vegetarian meals. I have meat and seafood maybe two to three times a week. I have a lot of lentils, soups and salads.

I love avocados and eat them often. I have them on toast, on sandwiches, salads, in smoothies and I have used them to make avocado basil pesto with pasta. Another way is just having it with salad dressing. I have that as a snack.

I include cheese in my salads for something creamy....goat cheese I make with spinach salads with a little bit of fruit and nuts, feta with Greek salads and bococcini with capers salad.

It is a personal preference but I find it pushes me to get up and moving more. I dont necessarily use it for the calorie count, but to see how many steps I am doing, how active I am, and my sleep pattern.

I write it on the previous day's. I work overnights 3-4 times a week so anything I eat after midnight I just place on the previous day until breakfast the next morning which I put on the new day.

Salmon is my go to normally as well but basa is definitely been a great alternative.

Basa fillets are my new favorite fish to eat. I bake it in the oven with smoked paprika and have it with mashed sweet potato and a green veggie.
