Coconut Crusted Salmon
This is a easy recipe that I normally eat with a salad of mixed greens. It's quick, simple but has an interesting flavor to it. 1 salmon fillet 2 tbsp unsweetened coconut. Preheat the oven to 350. Sprinkle coconut over both sides of the salmon fillet, place on a baking tray and bake for 10-12 minutes.
