You may be building muscle, which weighs more then fat, notice any difference in how your clothes are fitting, looser? As for water retention, eating cantaloupe, melons can help flush out excess water. You're doing really well overall though!

I typically walk as soon as I finish eating, I walk anywhere from 30 to 60 minutes at varying intensities and have not had any issues with it yet.

These aren't poor choices for protein, as a vegetarian I do protein combining all the time to ensure I get all the different types of protein for needed essential amino acids.

I'd find a nutritionist, they can help with meal planning and help keep you on the right track. I wouldn't think you should need to go to another doctor for a second opinion, you already stated you need to lose 90 lbs and I just imagine that another doctor will confirm that. Doctors only study a small section on nutrition…
