The cooked weight is about 2/3 of the uncooked weight. I start with 3 lbs of raw chicken in a slow cooker. I finish with approximately 2 lbs of cooked chicken.

I usually weigh it prior to cooking and after. With that being said, I mostly eat slow cooked chicken and steel cut oats. One loses water weight (I've noticed boneless skinless chicken breast loses about 33.3% of its weight), the other gains water weight (which varies depending on how soupy I make the oats.)
