Are you heavy lifting, or just lifting weights? What are your macros like? Do you adjust on weight days compared to rest days?

You already said that you went low carb. Yes, calories are important, but the macro's count just as much. e.g. If I only weight lift and maintain a heavy fat diet without enough carbs and protein on the days I train, I won't build muscle as well as if I increase protein/carbs and decrease fat on those days.

do your research on this, it's a controversial topic. Your body takes care of itself, it doesn't really need any kind of flush or detox...fiber alone keeps your colon "clean"

shakes can be rough on the stomach if it's already empty...you do get used to it though. When I still ate "breakfast" I would use my blender and add oats and a bit of fruit to the protein shake, water only, no milk. It's obviously more substantial and definitely helped with the stomach.

exactly. I think the "starvation mode" theory was thought up in between sets of bicep curls. Eat 500 calories a day and tell me if you body goes into starvation and you don't lose weight.

You are over complicating it. Don't count your walking at work and rather just take those burned calories as a bonus. Log your actual exercise at the gym, and eat some (but not all) back. What kind of juice? Are you logging those calories as well? Googling will find you a thousand healthy diets, but just use commonsense, fast food is bad, fresh food is better.

Stop with the McDonalds, Subway and Pizza hut. These are not GOOD calories at all. I'd say the same for the V8 juice, there's too much sodium.
