Many protein powders are whey, which is from milk. It's not vegan, but the majority of powders you find are already vegetarian.

You can't target one area for fat loss. Aim to eat healthy and exercise for a healthy overall body, including your thighs.

I'm 6'5, but I've got about 10 pounds on you. Trying to lose 2 pounds a week is pretty excessive. I'd suggest trying for a minimum of 2268, especially with how much you exercise. Could be water weight, muscle density, poor tracking of calories, or a combination of the above. Do your measurements look better? The scale doesn't always accurately reflect your effort and results.

Work on distance/duration first, speed will come with time.

Are you drinking enough water? Your diary seems pretty healthy, a lot of people confuse hunger with thirst and or boredom. Try drinking some more, your body may get used to the lowered caloric intake. If it doesn't, your body might just require more calories. That's nothing to be ashamed of, everyone is different.

That would be almost 2.5 pounds a week, so it's technically possible but probably not the healthiest for you. Just keep track of what you eat and exercise regularly.
