I made my own coconut butter last night using unsweetened shredded coconut from whole foods (I used it to make vegan fudge). It is so good! I don't think it'd be good to fry something with--definently something to spread on toast or eat off a spoon :) Edited to fix typo

Honestly, I think it depends on the person. For me, I have to eat my exercise calories back or I feel worn down and tired and miserable.

It depends on how sore you are. I find that doing some cardio while my muscles are sore actually helps me feel less sore and gives me a boost of energy. I was really excited when I first found her too... until I tried some of her recipes. They look MUCH better than they taste, and as others have said she uses a ton of artificial junk. I really like some of the other food blogs I've found on this site though! Skinnytaste.com and chocolatecoveredkatie.com are awesome!

The original recipe I took this from used mashed banana instead of pumpkin and coconut flour instead of PB2... I'm sure you could come up with something delicious if you experiment!

I'm 5'2ish and my body likes to stay around 112lbs when I'm not watching what I eat but exercising regularly. I've weighed as little as 95lbs and that just doesn't look good! I think it all depends on your frame and how you feel comfortable. I'd much rather be a healthy 112 than a sickly 95 any day!
