You are correct. All food is made up of the 3 macronutrients: protein, carbohydrates, and fats. Anything that falls into "other" is basically a non-food item (such as sugar alcohols, olestra) containing nothing beneficial to your body. It is impossible to do low-fat, low carb, and low protein because there is nothing left.
