Laurie, I am so glad to know that your recovery is going smoothly. Yooly, I am so so sorry for your loss. My heart aches for you. The weather is wonderful here right now. In the 70's, sunny, with a nice breeze off the lakefront. Much better then the 90+ we had last week and over the weekend. Those days were miserable and I…

Maybe I missed it while I was gone, but what was in this roasted veggies mix? Cause it sounds like something I would really enjoy to have on hand!

Hey guys. I live. Spent the weekend just letting myself rest, mentally and physically. Snuggled the kitty, played some Sims, read some books... just allowed myself to disconnect. It was much needed and I think it really helped. So sorry for being gone so long. I will likely post more tomorrow and catch up. Just wanted to…

I have not been cooking. Been dealing with some depression so my energy levels have been horrible. Monday I ordered in Taco Bell (and then regretted it SO bad), Tuesday was eggs, toast, avocado, and baked beans, and Wednesday was frozen dumplings and tteokbokki (was a ramen type cup thing). So yea. Tuesday was the most…

My depression has been bad of late and my food has for sure taken the biggest hit. I have no energy to cook so my meal plan has gone out the window this week. Been living on eggs and toast or dumplings or ramen. That is all I feel like making. Anything that requires prep, even just cutting up some veggies, is just too…

I did take the weekend off from here because my mental health was not good. Luckily, my cat had his visit with the vet and no obstruction causing the problems, so we have some meds to help get everything working the way it is supposed to again. Saturday: Breakfast: Nothing Lunch: Almond Croissant Snack: Nothing Dinner:…

Yesterday was horrible. My cat was having some digestive issues and it had me freaked out. I just lost my other cat over Memorial Day weekend so that is still a very fresh wound. So even though multiple vets said he should be fine, my brain was in overdrive. Ended up in a panic attack last night. Breakfast: Bagel with…

@LenGray , I am glad you are doing better now. Take it slow. You know your body the best. Yesterday was an okay day. Breakfast: Bagel with cream cheese and cherry tomatoes Lunch: 2 grilled chicken thighs and honeydew (was supposed to have potato salad but didn't like it) Snack: Wheat things with boursin cheese Dinner: Side…

That lentil sauce looks really interesting and like something I would love to try, but I doubt I would ever make myself because it is a lot of food if I don't like it. Too bad we are so far apart Laurie! You always have some of the most interesting looking meal ideas and I am trying to have at least 1 meat free dinner a…

I used to post on this thread here and there. Saw it was back up and decided to maybe try to get back at it. As a note I am not currently logging due to many issues including physical and mental health. However, I need to start doing something after a really bad experience this weekend. So this may be a part of that.…

I used to have a therapist, but had to stop seeing her when I moved to a different state. Just have not had the push to try and get back in with one. Plus wait lists are SO long around here so who knows how long it would even be. I should look into my work benefits though because many include a handful of free visits…

It has been in the 70's all weekend here so I have been enjoying my 3 days off. Saturday I went to a Adopt and Shop event right by my place. No adopting happened (it was aimed towards dogs) but I got some info on shelters for when I am ready for another cat. Still was great because I got to snuggle all the puppies.…

It was chicken and broccoli in a sauce and topped with stuffing. Great in concept but my execution was not on par this time around.

So the casserole has potential. I think a lot of the issues I had with it were due to my own mistakes, including using the wrong size of dish. It took about twice as long to cook as it should have, but again, I think that was due to my choices. I would make it again, but make a few changes to the recipe itself and for sure…

I am so sorry for your loss Yooly. Be kind to yourself.

Not just for the calories, but the budget. Ran up my credit card with the trips to the emergency vet. Even though they worked with me a LOT to keep costs down, it still wasn't cheap. Dinner tonight is a very simple chicken, broccoli, and stuffing casserole. I may add form frozen carrots when I add the broccoli to increase…

I am eating like crap of late again. I have a food day scheduled for tomorrow with a nice brunch and then a food event (The Saucery sponsored by Rao's Homemade brand where they will be showcasing some new products, lots of samples, and then a discount on purchases). After that, I plan on not eating out again until my…

Work has been kicking my behind again this week. Just a lot going on. Once I get through the week things will settle down a bit, then totally back to normal by the end of the month. So if I go silent here and there, that is why. Thinking about trying to start focusing on my food intake again starting next week. Not sure if…

I may not log something like a slice of tomato or some lettuce on a sandwich, but I log all other fruits and vegetables. The reason I skip the teeny tiny things is due to a history of obsession and anxiety when it comes to food and logging. So for me it is a balance of mental and physical health.

I call something I make like this hibachi bowls. Really any protein works. I usually do steak, chicken, or shrimp or even a combination. For veggies on the side my favorites are sliced carrots, zucchini and onions, broccoli, or mushrooms.

I'm alive. Kinda just tried my best to keep myself busy this weekend so I didn't just sit around and dwell. Nothing exciting. Just explored the area more because the weather was so good. Tried a couple new restaurants, got some ice cream, and did a lot of walking.

Ate a lot better yesterday. Lunch was a salad kit that needed to be used up. Dinner was a stirfry of chicken, 2 types of mushrooms, and zucchini over rice. It was really good. I'll have leftovers for dinner tonight.

Today is grilled chicken with mashed potatoes topped with cheese and sour cream for lunch and then spaghetti with meat sauce and garlic bread for dinner. I know it is missing veggies, but I am just aiming to actually EAT. Depression makes that hard enough.

I tried to post one from my phone but it wouldn't let me, But you are right Laurie... I can't shut myself away. Otherwise the darkness will win and just the thought of that scares me. Everyone around me has been wonderful and supportive. No one has made me feel like "it was just a cat". I got his blood work from the last…

Warning... depressing post ahead. So my weekend went to hell. Saturday night/Sunday morning my cat Austin started to throw up blood. I rushed him to the emergency vet and we were there Sunday 3am until 10am. He had a dangerously low platelet count (6k to 7k when it should be 150k+). They put him on steroids and…

I'm alive. Work has just been crazy of late. It is a very busy time of the year for my position so I have been working extra hours and just not had much free time this week or last week. My foot is still hurting quite a bit. I spoke to my doctor about it last week and she did not think an Xray was worth the cost. Broken or…

Mine came out of a can. Skyline of course. No way did I have the energy to make it myself with how I felt yesterday. It's a bit higher in calories, but I have always been able to make it fit so it's a good option to just keep in the pantry. I always have spaghetti, onion, and cheese on hand for toppings. I really want to…

Tonight is Cincinnati chili. Woke up with dizzy spells because my allergies are so bad today. So much sinus pressure including my ears which is causing the dizziness. That means the idea of standing and cooking is not on the top of my list.

It is very similar to soy sauce in taste. Slightly less salty and maybe a touch sweeter, but I can barely tell the difference when used in sauces. When I was diagnosed with IC I had to cut put all soy products. While I have been able to add some back, I still limit it.

I also made a wonderful dish using mushrooms! Last night I made a fried rice with Enoki mushrooms, Beech mushrooms, steak, green onion, garlic, and kimchi. Sauce was coconut aminos, honey, oyster sauce, and sesame oil. It was an amazing balance of flavors. Savory, sweet, vinegary, spicy... it was all there.
