This sounds so simple and yummy! Going to add this to my breakfast options. I try to keep my breakfast calories under 200 so this works perfectly. Right now I am doing a yogurt cup, some granola, and some fruit.

I think I am gonna grab a small chuck roast this week so I can make beef stew. I have many stew recipes for the slow cooker so it will for sure be one of those. I am going to go back to eating something small to see if it helps my energy levels some. I'm thinking things like a small container of yogurt with a bit of granola or a hard boiled egg. Under 200 calories is my goal. After a few weeks I will see if it helps or not.

Yesterday was a tbone steak, baked potato, and roasted zucchini for Samhain. I only had about 3/4 of the steak and half the potato so will be making steak hash with eggs tomorrow night. Tonight will be more of the leftover chicken.

We had snow on and off yesterday which isn't super abnormal for Chicago, but still. It is also starting to get dark earlier and earlier. I do find I struggle this time of the year due to the cold and dark. It's harder to get out for walks, I feel so tired, and I just want to eat.

I roasted a chicken last night and made some glazed carrots and cornbread dressing. SO good. One of the best roasted chickens I have made and the dressing was the perfect balance of sweet and savory, especially with some gravy. If I don't eat it all, I may try and freeze some into single meals.
