Had a small binge on chocolate yesterday afternoon. I think it was emotional eating because I still don't feel good and I am stressed out. Hopefully today I can do better.

Been having grilled chicken sandwiches the last couple of nights with BBQ sauce, fried onions, and pepperjack cheese. They were really good. Tonight I am making some salmon with rice and broccoli. Sounds boring, but I have this sweet and savory asian style sauce that I make with it.

Woke up to -4F temps and wind chills of about -30F. Today's high will be 3F with a Wind Chill Warning of wind chills of -25F to -35F. We will get back into the positives and even double digits tomorrow with a high of 17F! So yea, it has been cold. Luckily I have not had to go anywhere.

Heated up some Cincinnati chili tonight. So way off plan, but I was having some medical issues (see my post in Share Your Day) and just could not handle cooking what I had planned. Luckily the tofu will last a bit in the fridge and the veggies were frozen.

Snowy puppy today... Chicago is supposed to be in for a lot of snow. Started before i got up this morning and it is supposed to keep going until tomorrow morning some time. I have to walk to the pharmacy to get my meds too which will be a mess.

Had a doctor's appointment today for this cough that I have had for 6 weeks. We did do some tests just to rule out infection still, but she believes it is a post viral reactive airway cough. So she has sent in some steroids and an inhaler for me. Hopefully something will help because I am so over this.

Still just doing a hard boiled egg in the mornings. It seems to be enough to take the edge off my hunger, but not too much to eat up my calories OR mess up the rest of my eating schedule.

Last night was apps and snacks which has always been the tradition for my family. Made way too much but will snack on them for awhile. Tonight is my fancy ring in the new year dinner. Steak, twice baked potato, sautéed mushrooms, and a salad. I should be back to posting more tomorrow. Gonna enjoy this last day off.

Today is my last day of work until January 2. Yay for holiday pay and PTO. Doing some traveling so I may not be around that much over that time period. If I don't get to say it later on, I hope you all have a wonderful holiday season, a Merry Christmas, and a Happy New Year.

You are correct. I used a cornstarch slurry to thicken it, though I couldn't quite get it as thick as I wanted. I still have yet to shake this dang cold or whatever it is. Throat is less irritated and I am coughing less, but now my nose is all stuffed up and everything keeps draining down my throat. Ugh. And I can't work out with this because I can't freaking breathe!

This sounds so simple and yummy! Going to add this to my breakfast options. I try to keep my breakfast calories under 200 so this works perfectly. Right now I am doing a yogurt cup, some granola, and some fruit.

I think I am gonna grab a small chuck roast this week so I can make beef stew. I have many stew recipes for the slow cooker so it will for sure be one of those. Hopefully that will make it easier for me to get the energy to make it. Eat off it a few days and then freeze what is left. Will be easy to thaw and reheat later…

I am going to go back to eating something small to see if it helps my energy levels some. I'm thinking things like a small container of yogurt with a bit of granola or a hard boiled egg. Under 200 calories is my goal. After a few weeks I will see if it helps or not.
