Would it help to set a smaller goal of maybe 10 lbs, lose that, then set another 10 lb goal? Maybe reaching the smaller goals will take your mind off the larger one. Are you fueling that exercise by eating half the calories back? If not, you're not getting enough fuel for your body. That said, there are days when one is just hungry, no matter what one eats. Give it a couple more weeks to see if you continue to lose an average of 3 lbs a week. If you continue to lose at this rate, it's too quick and I suggest eating a little bit more to slow it down. Try to keep the weight loss to about 1-1.5 lbs/week.

You can make salads from cooked vegetables, such as green bean salad or carrot salad. I'm not sure if that works for you? Maybe search for a 6-pack insulated cooler. With ice packs, they will keep your food cold and hold enough for 2 meals and snacks. Depending on width of your locker, it may fit.
