When I'm on my own, I use it as an excuse to make something my fiance doesn't like. Seafood, mushrooms, and/or cream cheese usually come into play. Last time I think it was a quick pasta with shrimp and mushrooms in a white wine sauce. So yummy!

I cut a big tomato into wedges and put a scoop of chicken or tuna salad on top. Done.

Tackle a project that keeps your hands busy. Scrub the kitchen, paint a bathroom, start a cross stitch. Bonus if it's something to surprise the hubs when he gets back.

I bought a square frozen pizza once that was 5 servings. Who cuts a square into 5 pieces! Also, the amusement park giant lolly-pop that was 10 servings. Come on 9 friends! Let's all take turns licking! Haha.

I used to buy tortilla chips with a range of dips (cheese, guac, salsa, sour cream, etc.) and eat until I made myself sick. While drinking a 6-pack of beer. It was a regular Friday night thing when I was single. Ugh.

I'm addicted to the Bolthouse Farms yogurt dressings. The blue cheese is awesome and only 35 cal for 2 Tbs. That'd be great on a chicken wrap.

I like the Mrs. Dash salt free seasonings. Lemon Pepper or Garlic & Herb are really good. Just sprinkle a little on and throw in a hot pan with a bit of olive oil. Super easy.

I've been eating avocado toast. Half an avocado mashed onto a piece of wheat toast with a little salt and pepper. It holds me over all morning.

When I first got my juicer I tried all sorts of recipes. Now I find myself going back to these two over and over. Simple ingredients that I usually have anyway. And tasty. Juice 1: 1 cucumber, spinach (about 1/2 a bag of the prewashed kind), 2 apples, 1 orange Juice 2: 4-6 carrots (peeled), 2 apples, 2 oranges
