I'm confused. If you think you eat too much fat, why did you choose those foods? Do you just enjoy those specific foods? There's not a way to counteract what you ate, but you could balance out the diet for the day by eating more low fat, high carb or high protein foods.

If you go to muscle failure, take that as the set. No real need to stop and start a set. If you are more focused on getting to the desired reps, lower the weight so that the last two to three reps are tough enough but accomplishable.

Aminos do play a role in muscle development, as they help synthesize protein. You could always get an amino supplement, but it's not as necessary depending on what your goals are. Sometimes, the aminos in powder is plenty.
