If you want the nutrition of the egg, eat the whole egg. If you just care about protein and nothing else, eat the white. But you can get an equivalent amount of protein very easily elsewhere.

Your percentages look ok to me, I shoot for 10% carbs, 25% protein and 65% fat.

Fasting glucose and fasting insulin blood test done st the same time (the ratio can be informative). I have never had a fasting glucose above 88 yet I am insulin resistant. I treat mine with metformin ER plus a low carb diet.

I don't agree that most people need to be under 25 g carbs/day to be in nutritional ketosis. Phinney and Volek are pretty clear that for most people it is 50 g carbs/day or fewer. Remember, most people are not metabolically deranged like many of us here are :). You might clarify this somehow.

What's your weight loss history as related to the temp sensitivity changes? I like almond flour, myself, though I am going to try crushed pork rinds soon. I have also heard grated parmesan cheese (the kind in the green can) works also. I avoid soy, so I wouldn't try that, personally.

Not sure what you mean by mineral test - did your doctor check your electrolytes in your blood? Should be a pretty simple test to figure out if you are too low or too high in something.

Xanthan gum is indeed a polysaccharide and acts as a thickener. It is typically used in very small amounts, so I doubt it contributes too often to the grams of fiber when added to products. Too much xanthan gum yields a slimy texture.

I have no problem cooking eggs in stainless steel pans. I just use sufficient butter.
