My healthy breakfast is closer to lunchtime. I usually have 4 eggs and ounce of cheese with some salsa and jalapenos. Finish it off with a side of bacon. Scramble is roughly 400 calories and the total depends how many slices of bacon I eat. Sometimes I'll have an iced coffee with heavy cream earlier in the day.

I would just watch your servings. I am a cheese addict so when I went keto, I thought that meant I could eat a whole wedge of cheese for breakfast as long as I watched the calories. I am assuming that this guy doesn't know what kind of fat is healthy. Stay away from trans fat, but learn that saturated fat is ok.

I eat cubes of avocado with pieces of bacon. The saltiness of the bacon goes very well with the richness of the avocado. Also, don't be afraid of regular eggs. You need fat in your diet, especially if you're doing low carb!

There's a new version of keto called Carb Nite where you can eat carbs after 3pm one day a week. I think it is supposed to help with stalling. I might try it out if I plateau.

Why don't you pre-count the veggies (put a lot in a tupperware container) and snack on them. If you have some left over you can adjust at the end of the day.
