  • Jambalaya is a good one too that doesn't take a lot of effort, makes a lot, and reheats extremely well. You can look up a recipe or get one off the rice box. We use sausage instead of shrimp in ours and it's awesome. Just count all the calories and portion it out. It's flavorful and full of good stuff!

  • Not sure what you're doing, but when I was on a 1200 cal/day diet, I didn't lose any weight. I bumped it to 1450 cal/day and I started dropping weight. Maybe you could change up the diet/exercise and see what happens?

  • Ditto to what everyone else said. Just add some resistance training, and you'll avoid the skinny fat look. I'm a marathoner and I do resistance training a couple times a week. I've found that cardio + weights = maximum fat loss, personally. See what works for you!
