Sorry - I haven't responded to many posts. I meant to respond to the post about rolling broccoli up in a thin chicken breast with Laughing Cow cheese. :)

Or, for a spicy version of this chop a couple jalepenos, and roll that up with the Swiss Laughing Cow cheese instead of broccoli. I also coat mine with bread crumbs before I bake it.
