I make this but mix cauliflower and potatoes - sooo yummy! I use a potato ricer but probably a hand potato masher would work too. I add low fat roasted garlic / herb cream cheese. I've also used cauliflower to make alfredo sauce. Boil/steam cauliflower in chicken broth (or veggie broth), puree and add parmesan cheese.
