Grill/bake several boneless chicken breasts on Sunday & they will last several days. Then you can dip or top them in different ways to mix it up. i.e.: Little bbq sauce, or Red Hot sauce w/little crumbled blue cheese, etc. You can also slice it thin for sandwiches/wraps or for a salad topper.

Thanks for the replies. I do love sushi, however I try not to eat it more than once a week due to mercury concerns. That is a viable option at this restaurant, so thank you for that suggestion. I set an absolute cutoff time for eating. I will not eat past 8:00 p.m. so I'm not going to bed with a lot of food in my tummy.
