I eat 1000+ calories in dinner and evening snacks a couple of hours before bedtime and it hasn't hurt me any.

You can mix tuna with unsweetened, plain Greek yogurt as a Mayo substitute. It's good and adds even more protein.

To be fair when I first started eating healthier I really didn't know what healthy high calorie foods were. I was mostly eating vegetables and tilapia. Took a while for me to figure out the healthy higher calorie options.

Yeah, MFP sets protein too low. 100g per day is usually a good goal.

Tone is not revealed until you remove body fat, so no amount of "tricep toning" will help. THAT SAID. I've reduced the flabby look of my upper arms quite a bit by doing 25lb plate raises to develop my feeble shoulder region and pull the skin tauter. My underarms are still fat though.

Most people put their weight loss goal at 2 lbs a week, which would be a calories deficit of 1000 calories per day. This is very aggressive for anyone who isn't obese. Then they make it worse by setting their activity level at sedentary when it isn't and not eating back exercise cals.

You're probably going to have to bulk and cut a couple of times, but you'll get the look you want.
