Unfortunately I was slack/exhausted from the gym so all I did was add a couple of tablespoons of Nandos peri peri marinade. The rest was just chucked on the plate in whatever quantity was in the fridge. I didn't know what it'd be like with the mango but yup, great combination, it was amazing!

My version of Nandos. Chicken tenderloins dipped in peri peri marinade. Spinach, avocado, tomato, pineapple and goats cheese. One of the tastiest meals I've ever made. I only allow myself 1200 calories a day and between the cheese and tortilla/taco shell it kinda adds up! :)

I get mine from the health food section at Safeway, it's 11 calories and ZERO carbs. It smells funky so rinse it with very hot water for a long time.
