frozen chicken breasts, canned veggies to cook on the stove, making healthy casseroles and holding on to as leftovers can certainly stretch a week or so, buying some bread for sandwiches. I dont know if there is an Aldi's near you but they have lots of goodies on the cheap! Their fresh produce is pretty awesome too.

Just seeing all the responses is making me feel even more motivated! Im starting with smaller, simpler goals. 1st goal -- consume consume consume WATER! This means cutting back on the coffee. Oy. :)
